Fundamentally they are sown at different times of year. Winter barley is sown in the autumn and ripens in late June/early July ready for harvest, spring barley is sown in early spring and is ready to harvest in late July and August.
The malting quality of the barleys will depend on the growing season, but in recent years winter barleys have been less adversely affected by the weather.
